Reformulation

Reformulation in this context is the gradual removal of so-called 'negative' nutrients including excess salt, sugar and saturated fat, replacing them with 'positive' nutrients such as wholegrains, fruit and vegetables and flavours such as citrus, spices and herbs. 

Food companies regularly review their product lines and recipes, and reformulation is encouraged as part of this exisiting process. Tagets, taxes and subsidies can be used to ensure that all companies engage in reformulation.
